Method
- 01
Preheat oven to 200°C (400°F). Line a large baking sheet with parchment paper.
- 02
Dice potato into 2 cm cubes. In a large bowl, toss potato with 15 g olive oil, 3 g salt, 1 g black pepper, and paprika. Spread in a single layer on the prepared baking sheet. Roast for 15 minutes.
- 03
While potato roasts, cut broccoli into florets. In the same bowl, toss broccoli with remaining 15 g olive oil, 2 g salt, and 1 g black pepper.
- 04
Pat salmon dry with paper towels. Rub salmon with minced garlic, then season with salt and black pepper. Slice lemon into thin rounds.
- 05
After 15 minutes, remove baking sheet from oven. Add broccoli florets and salmon fillet to the sheet, arranging them without overcrowding. Place lemon slices over and around the salmon.
- 06
Return to oven and roast for another 10-15 minutes, or until salmon is cooked through and flakes easily, potato is tender and crispy, and broccoli is tender-crisp. Serve immediately with a squeeze of fresh lemon juice.
